Where our ingredients come from
We generally source the majority of the fruit and vegetables used in our cooking as locally as possible. So a lot of it comes from Staffordshire, Shropshire, Worcestershire, Warwickshire, Herefordshire as well as Birmingham and the Black Country, depending on season and occasion. We often source things directly from local farms in these areas. Fruit and vegetables make up a very large part of what we produce. Some of the vegetables are organically produced, particularly the carrots and potatoes.
We cook nearly everything from scratch at our premises in Digbeth, Birmingham.
We buy Fairtrade goods such as coffee, tea, spices and sugar from Lembas and Traidcraft, among others.
We use environmentally-friendly cleaning products whenever possible (where environmental health regulations permit).
Increasing our use of environmentally friendly, organic, local and fair trade products is a priority for us.
We are happy to cater for the requirements of individual clients – for example, if you would like a totally vegan menu, or all ingredients to be organic, we can discuss with you.
