Pasta salad with roasted vegetables & sundried tomatoes (veggie)
Fresh tomato salad with cucumber, basil, parsley, olives with greek tofu (vegan option available)
Marinated mushroom salad with herbs in a red wine balsamic vinegar & garlic vinaigrette (vegan)

Vegetable Lasagna with 2 cheeses (mozzarella, cheddar) (veggie)
Baked stuffed red peppers with roasted vegetables, couscous and halloumi cheese (vegan option available)
Jamaican vegetable curry with rice & peas (vegan)
